Organic Valley cows live a happy life where they are free to live life naturally and graze on the pasture. Herds are small with the average size being less than 80 cows. Farmers allow cows ample time to be in the sunshine to roam and graze on fresh green grass. Organic Valley cows are just that: organic. They never use hormone (rBGH / rBST) injections to grow animals and have them produce milk at an unnatural rate. Also, antibiotics are not routinely administered and natural, holistic care is used to keep all farm animals well.

Organic Valley is a name that my children know and recognize already. Eating organic is a priority for us and Organic Valley makes it easy with their products. Plus we know they are a co-op of small farms that treat their animals with the highest of standards. And cows who get to roam and be normal cows produce great tasting milk!

We personally love their milk, eggs, and butter. We have tried and enjoyed several of their other products, but their milk is ALWAYS in our fridge. Organic Valley also creates cheese, half and half, cream, sour cream, cream cheese, cottage cheese, eggs, certain meats, prenatal and postnatal products, and produce! Our Easy, Very Favorite Breakfast Casserole

Who wants the easiest, tastiest breakfast casserole that is approved by toddlers, children, and adults alike? Our family adores our vegetarian casserole. We serve this when company is in town, on the weekends, before school or camp, on holidays, for morning parties, etc. It is always a hit, and you simply can’t mess up the recipe. Give it a try and tell us what you think!

Ingredients:

  • 1 1/2 cups of Organic Valley Cheddar Cheese
  • 1 cup of Cheddar Cheese on top
  • 2 cups of Organic Valley Milk (we use 2%)
  • 5 Eggs
  • 6 slices of Dave’s Killer Good Seed Bread (we like this bread because it feels hearty in the casserole) OR 8 slices of Dave’s Killer Thin Sliced Bread
  • 1 tablespoon of yellow mustard
  • 1 tablespoon of salt
  • Pepper to taste
  • Bragg Organic Sprinkle 24 Herbs & Spices

Directions:

  • Set oven to bake at 350 degrees.
  • Spray a glass 9×9 pan with non-stick spray.
  • In a large bowl add all eggs and whisk to break open the yolk.
  • Add milk to egg and whisk.
  • Season with salt and pepper and add in 1 tablespoon of mustard.
  • Coarsely chop pieces of bread into 1.5 to two inch cubes. We use the edges of the bread in the casserole too. Don’t overthink it! Just make the bread smaller to soak up the ingredients and so it can spread pretty evenly in the dish. It doesn’t have to look perfect.
  • Mix the bread in a large bowl. Let mixture sit for at least 5 minutes. The bread should soak up the moisture, but not be soaked in it. Here, you may want to eyeball the mixture and add a little more bread or more liquid (like milk or eggs).
  • 1 1/2 cup cheese and mix thoroughly.
  • Transfer the mixture to the baking dish.
  • Add one cup of cheese as the topping.
  • Cover with foil.
  • Bake at 350 degrees for 35 minutes.
  • Take the foil off. Bake for an additional 25 minutes or until the top of the casserole looks raised and toasted to perfection.
  • Let cool for about 15 minutes. You’ll notice how puffed up the casserole is. Once it cools, it will harden and settle a bit more. Slice and enjoy!
  • PRO TIP: You can also create this casserole at night time and pop in the oven right when you wake up in the morning. Super easy!

Have the best time with this recipe! We like to serve it with a homemade fruit salad too. We love eating this and everyone else comes back for more. Special shout out to my amazing sister-in-law for this recipe. My husband has crafted it into our own over the years, and we are thankful for the foundation she has given us.
