5 St. Patrick’s Day recipes that we love
1. Fruit Rainbow
Arrange any fruits and/or veggies you may have in order to make a colorful rainbow. Below you can find some ideas:
- Red Fruits:
Strawberries, raspberries, red apples, watermelon, tomatoes, red peppers.
- Orange Fruits:
Clementines, papaya, orange, cantaloupe, mango, carrots.
- Yellow Fruits:
Pineapple, banana, lemon, yellow peppers.
- Green Fruits:
Avocado, kiwi, green apple, pear, red grapes, cucumber.
- Purple Fruits:
Blueberries, grapes, blackberries, beets.
2. Green Pizza
Ingredients:
Store bought or homemade pizza dough. You can also use, pita bread. I made it on a stack of homemade crepes!
1 cup store bought or homemade avocado dressing
Broccoli florets
2 cups mozzarella cheese
Arugula and avocado to top
Instructions
- Preheat oven to 475F.
- Form 3 – 4 pizzas with the dough.
- Spread the dressing, place broccoli, and cover with shredded cheese.
- Bake for 7-10 minutes, until cheese starts to brown.
- Top with avocado and arugula. Serve and enjoy!
3. Avocado Deviled Eggs
Ingredients:
6 hard boiled eggs
1 avocado
1-2 tsp lime
2 Tbsp cilantro
2 Tbsp red onion
1/4 tsp garlic powder
2 tsp olive oil
Pinch of salt
Instructions:
- Halve the eggs length-wise and remove egg yolks.
- For the avocado mix: Combine 2 egg yolks, and the rest of ingredients.
- Spoon into the egg whites.
4. Green Smoothie Bowl
Ingredients:
2 avocados
1/2coconut milk
1/2 apple
1 tsp vanilla extract
2-4 pitted dates (depending on level of sweetness desired)
Instructions:
Blend. Top with your favorites: almonds/nuts, apple slices, cacao nibs, coconut chips, chia seeds, blueberries, hemp seeds.
5. Green Shamrock Shake
Ingredients:
1 cup milk of choice
1 frozen banana
1/4 cup frozen spinach
Instructions:
Blend. Optional decorate with chocolate chips.
